In the Kitchen

I have been craving some "Good" Granola.







And I do make an effort to eat healthy.
The lack of molars does make me picky on my Granola though.
I like crunchy but airy and crisp, not crunchy and chewy, so I have my favorite recipe over the years. My Chevy Man loves it.
 He used to think it was not for Chevy Man consumption, but turns out he likes it.
I thought I would share with you.





I like to get everything together before I start,

this really helps in case you have an ingredient delete.

Start the oven to 300 degrees.


 
One Pound Quaker Oats
6 Tablespoons Ground Flax Seed
3 Cups of Nuts chopped coarse
One Teaspoon Cinnamon
One Teaspoon Cardamom
One Teaspoon Fresh Ground Nutmeg

One Stick of Butter
1/3 Cup Water
One Cup Packed Dark Brown Sugar
One Teaspoon Pure Vanilla
One Teaspoon Sea Salt

3 Cups Chopped Dried Fruit
3 Tablespoons Chopped Candied Ginger

8 Ounces Milk Chocolate Chips






Grind up half of the pound of oats,
I like the quick cooking for this recipe best but as you can see,
 I only had old fashioned.
 Grind them to powder, or into Oat Flour I should say.
This is what will give the clumping effect I like.






Add the rest of the whole Oats, Flax Seed,
Cinnamon, Cardamom, Nutmeg and Chopped nuts.






Microwave the Brown Sugar, Butter and Water till bubbly.





Stir in the Vanilla and Salt.





Stir, stir, stir...Let it Stand for over 10 minutes.






This Air Bake Pan is awesome.
 Use Parchment Paper and make sure the oven is  not over 300 degrees.
I set mine to 285, it cooks hotter than normal, it needs calibrating I'm sure.
Bake in 20-30 minute intervals,
stirring in between,
and cook till golden brown all through.






Cool, cool, cool...

You have to go do something else,  lol...






Now get your chopped dried fruit
and candied ginger mixed in one of the bowls.







I portioned out a smaller bowl of the granola as it cooled to make
the milk chocolate version for Chevy Man.






Mmmm...






I get 5 Quart Jars of mix from this recipe.









This Granola is great over Yogurt with Honey poured on top.
I don't like to cook the honey in the granola because
it makes it chewy and depletes the Honey's
nutritional value.

Chevy Man eats his Milk Chocolate version on Ice Cream.

I am known to do the same!
